I remember when I used to go to Billingsgate fish market there was a stall that just did smoked salmon and all of it was a brown colour not red like you see in the shops .

Cracking meal that,may i suggest taking a cup of the water from the cooked cabbage adding vinager,salt and pepper for a drink to go along with the lunch.
