Shame I didn't see this last night - I'd have de-scaled it, stuffed some fresh herbs inside and whacked it in a hot pan with olive oil and lemon juice in. You'd have got it cooked perfectly and a really crispy skin.

No, not at all! You just kept going on about a crispy skin and doing it that way it's really crispy. I know you're a decent cook, it's just your judgement where sandwiches are concerned that's a bit worrying! ;)

Mouldgate......was more a bit of a laugh than anything else!
 
Did you see Eastenders last night by any chance? The chiller got left off overnight in the Minute Mart, and Patrick then decided to sell everything at half price rather than binning it - so there's going to quite a lot of that going on I think! Especially Dot with her prawn sandwich!

No.....sorry, i was busy scrapping my pinned open eye balls with some vinegar dipped egg shell!!!

That's why I put in the "by any chance" - just made me think of you a bit. Anyway, your trout was tasty?

It was and it was cooked to perfection, the last pic does not do it justice, the flesh was firm enough but also moist and able to be pulled away from the bones in huge bite size pieces.

I stuffed it with Fennel, Thyme, bacon, and lemon. Then made a lemon Zest and garlic rub for the skin, a couple of num of butter then baked it. When it was ready, i poured the juices in to a hot small pan, reduced down, added some wine and then at the very end a knob of butter to get the silkyness to the sauce.

Had it with new potatos, streamed green beans and honey glazed carrotts
